Coconut Chicken Curry

Apart from Rice and stew, I love rice and curry! So many curries out there made with any choice of meat. I love oxtail curry! so good! This time I made coconut chicken curry and one thing I love about making chicken curry is that the ingredients are easily accessible and affordable. Chicken is definitely much cheaper than oxtail you know! lool Lets get straight to what you will need to prepare this:

Ingredients

1 kilogram chicken thighs or breast (diced or stripped)

1 green, red and yellow pepper (3 in total) 

1 large carrot (diced)

400ml or 1 can coconut milk

1 onion (diced)

1 – 2 scotch bonnet

½ teaspoon ginger powder

½ teaspoon garlic powder

1 teaspoon thyme

1 teaspoon white pepper

½ teaspoon black pepper

1 tablespoon curry powder

½ teaspoon salt (add more if needed)

2 bay leaves

4 bouillon or stock cubes (Maggi or Knorr or your preferred choice).

¼ cup sunflower oil

½ cup water

1 tablespoon all-purpose flour + ¼ cup water [for thickening the curry]

Directions

1. Wash your chicken and cut them into small peices. Also Dice vegetables, onions and peppers.

 2. Turn up your gas to a medium heat and heat up the oil.

3.  Add the bay leaves and Pour in the onions till its translucent.

4.  Add curry powder and let it fry in the oil for about 2 minutes till it is brown and toasted. This is to allow the oil absorb the curry flavour.

4. Now add in garlic, ginger, black and white pepper, bouillon cubes, salt and diced scotch bonnet into the pot to fry for a minute

5. Stir the chicken into the pot and leave to simmer on LOW to medium heat for about 8 minutes

6. After 8 minutes the chicken should have released its stock, now add coconut milk and water and let it boil on MEDIUM Heat for another 8 to 10 minutes.

7.  To thicken the curry, In a cup get ¼ cup water and add in 1 tablespoon of flour. Stir till its smooth and pour into the boiling chicken curry

8.  After about 3-4 minutes it should have thickened. Stir in carrot and green pepper and turn the gas off and let it simmer in the hot pot with no heat. Once it has simmered, curry is ready to eat!

9. Boil some rice to go with your curry if you wish.
