Almond Banana Pancakes

A Happy NEW YEAR to you all!! I hope you had a great holiday? I sure did! For the first recipe this year, I present to you this easy, delicate pancake recipe - Almond-Banana Pancakes. I loved them and they are even better paired with yogurt and blueberry sauce I made. Quick and easy! To make this you will need:

1 cup blanched almond flour 

1egg

1 banana

1/2 teaspoon vanilla extract 

1 teaspoon baking powder 

1 tablespoon coconut oil

3 tablespoons water 

Directions

  1. Mash banana with a fork and add in all wet ingredients. 

  2. Combine all dry and wet ingredients in a bowl and hand whisk together until well combined.

  3. Heat up a lightly greased frying pan on medium heat.

  4. This pancake is delicate so I suggest smaller pancakes for easy flipping. Using a 1/4 measuring cup, Scoop batter onto the heated pan.

  5. Flip your pancakes when you begin to see bubbles at the top or until the other side is golden brown.

  6. Serve with plain yoghurt and blueberry sauce or any topping of your choice! 

If you want to pair this with blue berry sauce I made: you will need

a handful of blueberries or any berry of choice

1-2 teaspoon of sugar

Directions

  1. In a sauce pan, add water blueberries, sugar and bring to boil for about 5 minutes on medium to high heat.

  2. When it begins to boil, stir together till the berries are broken down and become a bit thicker.Once it is thick turn of the heat and let it cool.

  3. Drizzle some over your pancakes and munch away!
