Almond - Oatmeal cookies

Hey Friends! New week, new recipe! These days, I find myself making up recipes in my head and this is one of them. I wanted to eat cookies so bad but I knew I could not afford to eat lots of store bought cookies. Then a thought came to mind:I could actually make for myself!! Well I did and tried to make healthy substitutes but as with everything, moderation is key! loool. With a combination of almond flour, oats and some other ingredients, this recipe came to life. It is very easy to make and you won’t have to spend hours in the kitchen! Now let’s get down to business.

You will need:

1 cup blanched almond flour

1 cup oats

1/4 cup coconut oil

1 egg

1/3 cup brown sugar

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon salt

1/4 teaspoon cinnamon powder

1/4 teaspoon nutmeg

Directions

  1. Preheat oven to 350 degrees Fahrenheit.

  2. In a bowl, combine coconut oil, vanilla extract, brown sugar, egg and whisk together with a hand whisk till smooth or like picture below.

  3. In a separate bowl, mix almond flour, oats, baking powder, nutmeg, cinnamon and salt.

  4. Pour the dry ingredients into the oil-sugar mixture and mix with a wooden spoon or clean hands till the wet and dry ingredients are combined. No need to “over-mix” (if you think your cookie mixture is sticky, place in the refrigerator for a few minutes to harden or make it easier to handle)

  5. Line your baking sheet with parchment paper

  6. Roll the cookie dough into small balls, and slightly press the ball flat with your other palm. Just like the picture below shows.

  7. Bake in the oven for 12-15 minutes .

  8. Place cookie on a rack and let it cool or eat (if you are like me!), I love my cookies hot-warm!
