Creamy Pasta Salad

I love when we have a guest service in my church, everyone brings food and we all eat together in the spirit of Acts 2:46 (check the Bible verse if you are interested in what I am implying). Jollof, fried rice, puff-puff, the Nigerian spread! Apart from Nigerian delicacies there are some western delicacies present including apple pies, crumbles and this creamy pasta salad! Without really knowing what to expect, I just took some of the pasta salad to eat with my rice. Long story short, I ENJOYED it. I asked Kate who made it to share her recipe with me so I could share with you all and she was kind enough to do so. It is also very easy to make so here we go:

You will need:

637g chicken breast

1/4 teaspoon black pepper

1/4 teaspoon white pepper

1/4 teaspoon garlic powder

Pinch of salt to taste

3 cups boiled penne pasta

3 tablespoons apricot Jam

8 tablespoons mayonnaise

1/4 paprika

1 medium carrot

1/2 medium sized bell pepper or vegetable of choice

2 sprigs of spring onions

Directions

  1. Clean chicken breast, season with salt, black pepper, white pepper and garlic powder and place in the oven to grill. Once it is grilled, Dice chicken breasts into chunks.

2. Boil pasta with salt to taste till al dente.

3. Mix apricot jam and mayonnaise with paprika in a separate bowl.

4. In another bowl pour in your boiled pasta, diced chicken breast and pour in the mayonnaise mixture until well combined.

5. Pour in carrot or veggies of choice, spring onions for taste and place in refirgerator to cool.

6. Serve as a side or as a meal on its own! Enjoy!
