Shortbread Apple Crumble

Sometimes last year, we had friends visit and I just planned to make jollof rice, last minute I remembered an easy and delicious dessert my lovely sister-friend Eniola made while I was still in Canada. I quickly called her up and she gave me a run down of how she made it. Tried it and it came out perfect, our friends loved it too! If you’re looking for an easy dessert option to make for your friends and family, this apple crumble recipe is not going to disappoint you.If you Love short bread you will love this one.

You will need:

6 Green apples (Granny smith apples are great)

2 teaspoon cinnamon powder

2 tablespoon brown sugar

193g short bread or 10 short bread fingers

3/4 cup granola

1/4 cup brown sugar

100g block butter (cold)

To make the apple sauce:

  1. Peel your apples and dice them into cubes. I suggest grating 2 apples (although this is optional) with the largest blade of your grater (we are not trying to puree it, but to get variation in textures) then dice the remaining 4 apples into cubes.

  2. Get a sauce pan, on medium to high heat pour in the grated apple first and add in 2 tablespoon of brown sugar, cinnamon and let it brown or caramelize for two to three minutes.

  3. Add the remaining diced apples and pour in 1 cup of water and leave to simmer on medium - high heat for about 5 - 7minutes. Once it is boiled, remove from heat and set aside. let us make the crumble!

To make the crumble:

1. First off, preheat oven to190°C/375°F/gas 5.

2. Place short bread fingers into a food processor and process until its powdery. Alternatively, place short bread in a plastic bag and crush with wooden spoon or rolling pin until it is in flour form.

3. In a bowl pour in short bread flour, brown sugar, cold butter and mix with your fingertips until it looks like bread crumbs. Add the granola and mix until fully incorporated. Note, your butter should be cold to make the process quicker.

4. In an oven dish or ramekins, pour in the apple sauce and scatter the crumble over the apple sauce.

5. Place in the oven to bake for 15 minutes or until golden brown.

6. I enjoy having my crumble with evaporated milk or cream on top! this step you cannot miss haha, so delicious!
