Coconut - Banana Loaf

Banana bread (is it bread, is it cake, I really don't know again lol) is a favourite of many who like baking. How about a combination of Coconut and Banana though? All I can say is the aroma while baking this was lovely. And the taste? yummy! To make this loaf you will need:

1 banana

1 cup desiccated coconut

140g butter (room temperature) (equivalent to 9.5 tablespoons)

1/3 cup sugar

2 eggs

1 teaspoon vanilla extract or essence

1 teaspoon baking powder

1/2 cup all purpose flour

6 tablespoons evaporated milk

Almond shavings or nuts (for toppings) [optional]

Instruments Needed:

Hand mixer or a wooden spoon/spatula

Measuring cups and spoons

Small kitchen measuring scale

Directions

1. Grease with butter the cake tin and preheat the oven to 180ºC/350ºF/gas 4.

2.  Combine flour, desiccated coconut and baking powder in a bowl and mix

3. Using a mixer, cream butter and sugar until evenly mixed and well combined. Alternatively, if you do not have a hand mixer you can use a wooden spoon or spatula! 

 

4. Using a whisk, beat eggs and vanilla extract in a small bowl and stir into the sugar and butter mix

5. Using the mixer, mix until egg is well combined into the butter and sugar mix.

6. Mash banana and pour into the egg-butter mix. Add milk

7. Gradually stir in the dry ingredients (flour, desiccated coconut and baking powder) and fold into the batter using a spatula or wooden spoon just until all ingredients are well combined. (careful not to over stir the batter)

8. Pour in batter into the baking pan and add the almond shavings or whatever topping of choice and bake for 45-50minutes or until golden brown and a skewer or knife comes out clean.

9. Once baked, set aside to cool before serving

10. Your coconut-banana bread is ready to eat. Get yourself a cup of tea and enjoy a slice or more! haha
